THE RENOWNED BORDEAUX WINE BECOMES AN INSPIRATION FOR DELICIOUS PASTRIES FROM THE BASSIN D’ARCACHON
This summer, food-lovers have an appointment in south-west France with three novel versions of the famous Dunes Blanches from Chez Pascal.
This sweet delicacy, a chouquette filled with a light chantilly-like cream that has become a signature speciality of the Bassin d’Arcachon, has found new inspiration in the three colours of Mouton Cadet: Mouton Cadet Rouge, Mouton Cadet Blanc and Mouton Cadet Rosé.
A NOVEL SUMMER TRIO
Inspired by the three colours of Mouton Cadet wines, Pascal Lucas, who invented the Dunes Blanches in 2007 in Piquey, a small village on the Cap-Ferret peninsula, and master winemaker Pierre Lambert put their heads together to create a seasonal trio of the delicacies, associated with each colour in the vintage Mouton Cadet trilogy.
In this partnership, Baron Philippe de Rothschild’s winemakers have worked hand-in-hand with the Chez Pascal pastry chefs to come up with a true interpretation of each wine, in a unique seasonal creation.

The new Mouton Cadet Rouge style, launched with the 2015 vintage, offers a rounder, smoother and more succulent wine that inspired Pierre Lambert and Pascal Lucas to new heights of invention. Emblematic of what south-west France has to offer, their creation incorporates the Basque country staples of black cherry and Espelette pepper into the secret recipe of the chantilly cream.
Black cherry echoes the crimson colour and red fruit flavours of the iconic Mouton Cadet wine, while the Espelette pepper reminds us of the blend’s characteristic spicy notes.

Drawing inspiration from the fruity and floral aromas and flavours of Mouton Cadet Blanc, the Chez Pascal pastry chefs and the Mouton Cadet winemakers have come up with a customised creation featuring yuzu flavours.
The acidity brought by this East Asian citrus fruit creates a tropical and zesty combination that subtly reveals the distinctive aromas and flavours of Mouton Cadet Blanc.

The light pink colour of Mouton Cadet Rosé immediately pointed Pascal Lucas and Pierre Lambert towards a refreshing, crisp berry for this Dune Blanche: redcurrant.
The fruity, slightly sweet character of redcurrant highlights the liveliness and freshness of Mouton Cadet Rosé, making for a bespoke, pink-toned sweet seasonal delicacy.
