Mustard roasted chicken

  • 1 chicken
  • 3 tbsp wholegrain mustard
  • Mixed herbs
  • Salt and pepper
  • Optional:
  • 1 lemon
  • A sprig of thyme


  1. Preheat the oven to 180 C/350 F/gas 4.
  2. Place the chicken in a baking dish.
  3. Coat with wholegrain mustard and season with salt and pepper. Pour two glasses of water into the dish.
  4. When the oven is hot, place the chicken in it and roast for 60 mins.
  5. Enjoy hot or cold, with a side of new potatoes, for example.

The Chef's twist

For an even tastier dish, place a lemon cut into quarters and a sprig of thyme in the chicken.
