Tasting notes

Aspect: Linden yellow with a slight golden cast.

Nose: The nose opens on white blossom aromas such as acacia and hawthorn, then goes on with airing to develop citrus fruit notes, especially yuzu and bergamot, and a touch of the flinty minerality typical of the appellation.

Palate: A smooth and fresh attack lifted by perky citrus flavours leads into a highly refined mid-palate on notes of passion-fruit and sage and a finish that confirms the mineral touch clearly apparent on the nose.

Scallop carpaccio with vanilla oil, guinea-fowl breast with creamed mushrooms or a sole meunière with brown-butter sauce.
