Beef tartare

  • 250g beef
  • 3 egg yolks
  • 1 medium onion
  • 1 tbsp Dijon mustard
  • 1 tbsp capers
  • 1 tbsp ketchup
  • 2 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • Flat parsley
  • Tabasco
  • Salt and pepper


  1. Mince the meat with a sharp knife.
  2. Chop the onion and the parsley. Crush the capers.
  3. Separate the egg yolks from the whites. In a bowl, mix the egg yolks with the Dijon mustard, Worcestershire sauce, ketchup, Tabasco, salt and pepper.
  4. Add the olive oil, whisking as for a mayonnaise.
  5. Add the onion and the capers.
  6. Add the meat and the parsley and adjust the seasoning.
  7. Refrigerate or serve immediately. You can use a ring to make the presentation more attractive.
    Suggested side: sweet potato fries.
