Beef tartare

Ingredients
- 250g beef
- 3 egg yolks
- 1 medium onion
- 1 tbsp Dijon mustard
- 1 tbsp capers
- 1 tbsp ketchup
- 2 tbsp olive oil
- 1 tsp Worcestershire sauce
- Flat parsley
- Tabasco
- Salt and pepper
Preparation
- Mince the meat with a sharp knife.
- Chop the onion and the parsley. Crush the capers.
- Separate the egg yolks from the whites. In a bowl, mix the egg yolks with the Dijon mustard, Worcestershire sauce, ketchup, Tabasco, salt and pepper.
- Add the olive oil, whisking as for a mayonnaise.
- Add the onion and the capers.
- Add the meat and the parsley and adjust the seasoning.
- Refrigerate or serve immediately. You can use a ring to make the presentation more attractive.
Suggested side: sweet potato fries.
