Chocolate lava cake

Ingredients
- 160g dark cooking chocolate
- 130g salted butter
- 130g granulated sugar
- 3 eggs
- 50g flour
- 2 tbsp icing sugar
- 1 small bunch fresh mint
Preparation
- Preheat the oven to 230 C/450 F/gas 8.
- Break up the chocolate, dice the butter and melt in a bain-marie or microwave.
- Mix well then beat in the sugar, the eggs one by one and the sieved flour. Mix well until perfectly smooth.
- Pour the mixture into silicon muffin moulds.
- Bake in the oven for 11 mins. Leave to cool for a few minutes after baking.
- Remove gently from the moulds and plate up. Sprinkle with sieved icing sugar and decorate with a few fresh mint leaves.
The Chef's twist
Put a pinch of flower of salt on top of the cake for an explosion of chocolate flavour on the palate!
