Chocolate lava cake

  • 160g dark cooking chocolate
  • 130g salted butter
  • 130g granulated sugar
  • 3 eggs
  • 50g flour
  • 2 tbsp icing sugar
  • 1 small bunch fresh mint


  1. Preheat the oven to 230 C/450 F/gas 8.
  2. Break up the chocolate, dice the butter and melt in a bain-marie or microwave.
  3. Mix well then beat in the sugar, the eggs one by one and the sieved flour. Mix well until perfectly smooth.
  4. Pour the mixture into silicon muffin moulds.
  5. Bake in the oven for 11 mins. Leave to cool for a few minutes after baking.
  6. Remove gently from the moulds and plate up. Sprinkle with sieved icing sugar and decorate with a few fresh mint leaves.

The Chef's twist

Put a pinch of flower of salt on top of the cake for an explosion of chocolate flavour on the palate!
