Creamed peas on toast

Ingredients
- 4 slices farmhouse bread
- 70g fresh garden peas
- 1 handful fresh pea shoots
- 1 mozzarella
- Some cherry tomatoes
- 2 shallots
- 1 garlic clove
- ½ lime
- Olive oil
Preparation
- Finely chop the shallots.
- Heat a little olive oil in a frying pan and gently cook the shallots and peas until soft (they must not brown).
- Season with salt and pepper and blend in a blender to make a purée.
- Cut the garlic clove in half.
- Toast the slices of bread and rub with the garlic.
- Spread them with the pea purée and squeeze over a few drops of lime juice.
- Add ¼ of the mozzarella to each slice and decorate with pea shoots and quartered cherry tomatoes.
