Creamed peas on toast

  • 4 slices farmhouse bread
  • 70g fresh garden peas
  • 1 handful fresh pea shoots
  • 1 mozzarella
  • Some cherry tomatoes
  • 2 shallots
  • 1 garlic clove
  • ½ lime
  • Olive oil


  1. Finely chop the shallots.
  2. Heat a little olive oil in a frying pan and gently cook the shallots and peas until soft (they must not brown).
  3. Season with salt and pepper and blend in a blender to make a purée.
  4. Cut the garlic clove in half.
  5. Toast the slices of bread and rub with the garlic.
  6. Spread them with the pea purée and squeeze over a few drops of lime juice.
  7. Add ¼ of the mozzarella to each slice and decorate with pea shoots and quartered cherry tomatoes.
    Serve and enjoy!
