Heritage tomato tartare

  • 2kg heritage tomatoes
  • ½ onion
  • 20g capers
  • 20g pickled gherkins
  • ½ bunch flat parsley
  • Mustard
  • Ketchup
  • Worcestershire sauce
  • Tabasco
  • Olive oil


  1. Preheat the oven to 90 C/195 F/gas ¼.
  2. Wash, skin and deseed the tomatoes. Place in a single layer in a dish and drizzle with olive oil.
  3. Roast in the oven for 4h.
  4. Finely chop the onion, capers, gherkins and parsley.
  5. Roughly chop the roasted tomatoes and add the finely chopped condiments.
  6. Season to taste with mustard, ketchup, a dash of Worcestershire sauce and a few drops of tabasco.
  7. Serve chilled with a slice of toast.
