Heritage tomato tartare

Ingredients
- 2kg heritage tomatoes
- ½ onion
- 20g capers
- 20g pickled gherkins
- ½ bunch flat parsley
- Mustard
- Ketchup
- Worcestershire sauce
- Tabasco
- Olive oil
Preparation
- Preheat the oven to 90 C/195 F/gas ¼.
- Wash, skin and deseed the tomatoes. Place in a single layer in a dish and drizzle with olive oil.
- Roast in the oven for 4h.
- Finely chop the onion, capers, gherkins and parsley.
- Roughly chop the roasted tomatoes and add the finely chopped condiments.
- Season to taste with mustard, ketchup, a dash of Worcestershire sauce and a few drops of tabasco.
- Serve chilled with a slice of toast.
