Miso and toasted sesame beef gravlax

  • 400g beef fillet
  • 2 garlic cloves
  • 1 lemon
  • 1 piece ginger
  • 2 tbsp soy sauce
  • 2 tbsp granulated sugar
  • 2 tbsp sea salt
  • 1 tbsp Tabasco
  • 2 aubergines/eggplants
  • Olive oil
  • 2 tbsp miso paste
  • 4 tbsp toasted sesame oil


  1. In a bowl, chop the garlic, zest the lemon, grate the ginger, add the soy sauce, sugar, coarse salt and Tabasco.
  2. Brush the beef with the marinade then keep in the fridge for 24h.
  3. Wash and halve the aubergines/eggplants, then score in a diamond pattern.
  4. Colour them flesh side down in a frying pan.
  5. Drain the beef, sear in a frying pan then leave to cool.
  6. Preheat the oven to 180 C/350 F/gas 4.
  7. Mix the toasted sesame oil and miso in a bowl.
  8. Coat the aubergines/eggplants with the mixture and bake in the oven until fully cooked.
    Thinly slice the beef.
  9. Plate up with the aubergines/eggplants and serve.
