Miso and toasted sesame beef gravlax

Ingredients
- 400g beef fillet
- 2 garlic cloves
- 1 lemon
- 1 piece ginger
- 2 tbsp soy sauce
- 2 tbsp granulated sugar
- 2 tbsp sea salt
- 1 tbsp Tabasco
- 2 aubergines/eggplants
- Olive oil
- 2 tbsp miso paste
- 4 tbsp toasted sesame oil
Preparation
- In a bowl, chop the garlic, zest the lemon, grate the ginger, add the soy sauce, sugar, coarse salt and Tabasco.
- Brush the beef with the marinade then keep in the fridge for 24h.
- Wash and halve the aubergines/eggplants, then score in a diamond pattern.
- Colour them flesh side down in a frying pan.
- Drain the beef, sear in a frying pan then leave to cool.
- Preheat the oven to 180 C/350 F/gas 4.
- Mix the toasted sesame oil and miso in a bowl.
- Coat the aubergines/eggplants with the mixture and bake in the oven until fully cooked.
Thinly slice the beef. - Plate up with the aubergines/eggplants and serve.
