Polenta fries

Ingredients
- For the fries:
- 30cl water
- 100g corn polenta
- 70g Ossau Iraty cheese
- Espelette pepper
- Cooking oil
- For the dip (optional):
- 100g cream cheese
- 2 tsp lemon juice
- Lemon zest
- A few mint leaves
Preparation
- Bring 30cl of salted water to the boil in a pan, add the polenta and cook for a few minutes, stirring all the time. Season with Espelette pepper.
- Grate the Ossau Iraty cheese and fold it into the polenta. Cover with cling-film and leave in the fridge for an hour.
- Heat the oil. When it reaches the right temperature, cut the polenta into thick sticks and fry for 4-5 mins.
The Chef's twist
Make an appetizing dip to go with the polenta fries. Mix the cream cheese with the lemon juice and zest. Add a few finely chopped mint leaves and a good grind of black pepper. Enjoy!
