Polenta fries

  • For the fries:
  • 30cl water
  • 100g corn polenta
  • 70g Ossau Iraty cheese
  • Espelette pepper
  • Cooking oil
  • For the dip (optional):
  • 100g cream cheese
  • 2 tsp lemon juice
  • Lemon zest
  • A few mint leaves


  1. Bring 30cl of salted water to the boil in a pan, add the polenta and cook for a few minutes, stirring all the time. Season with Espelette pepper.
  2. Grate the Ossau Iraty cheese and fold it into the polenta. Cover with cling-film and leave in the fridge for an hour.
  3. Heat the oil. When it reaches the right temperature, cut the polenta into thick sticks and fry for 4-5 mins.

The Chef's twist

Make an appetizing dip to go with the polenta fries. Mix the cream cheese with the lemon juice and zest. Add a few finely chopped mint leaves and a good grind of black pepper. Enjoy!
