  • 4 beef ribs/Rib of beef for 4
  • 1kg new potatoes
  • Butter
  • Thyme
  • Salt and Kampot pepper


  1. Coat both sides of the rib with sea salt and leave for 15-20 mins, depending on the thickness of the rib.
  2. Scrape off all the salt with a knife.
  3. Melt a knob of butter with a sprig of thyme and brush the rib with it.
  4. Fire up your barbecue. When the embers are ready, place the rib on the grill and cook for 5-8 mins per side according to your taste, taking care not to overcook.
  5. Slice and serve with new potatoes and smoked garlic or oven-roasted purple carrots.
