Salmon and grapefruit salad

Ingredients
- 1 avocado
- 200g Lamb's lettuce
- Juice of ½ lemon
- 4 radishes
- 2 slices smoked salmon
- ½ red onion
- Cherry tomatoes
- ½ grapefruit
- Olive oil
- Vinegar
- Salt and pepper
Preparation
- Peel the grapefruit, removing all the pith. Separate the segments and put them in a bowl. Collect the juice and keep for seasoning.
- Cut the smoked salmon into thin strips.
- Peel and chop half a red onion.
- Rinse and dry the Lamb’s lettuce.
- Peel and dice the avocado, then drizzle with the lemon juice.
- Wash and trim the cherry tomatoes and radishes and cut them into thin slices.
- To make the dressing, pour the vinegar into a bowl, add the salt and pepper then whisk with the olive oil.
- Plate up all the ingredients, drizzle with the dressing and grapefruit juice and serve.
