Salmon and grapefruit salad

  • 1 avocado
  • 200g Lamb's lettuce
  • Juice of ½ lemon
  • 4 radishes
  • 2 slices smoked salmon
  • ½ red onion
  • Cherry tomatoes
  • ½ grapefruit
  • Olive oil
  • Vinegar
  • Salt and pepper


  1. Peel the grapefruit, removing all the pith. Separate the segments and put them in a bowl. Collect the juice and keep for seasoning.
  2. Cut the smoked salmon into thin strips.
  3. Peel and chop half a red onion.
  4. Rinse and dry the Lamb’s lettuce.
  5. Peel and dice the avocado, then drizzle with the lemon juice.
  6. Wash and trim the cherry tomatoes and radishes and cut them into thin slices.
  7. To make the dressing, pour the vinegar into a bowl, add the salt and pepper then whisk with the olive oil.
  8. Plate up all the ingredients, drizzle with the dressing and grapefruit juice and serve.
