Smoked salmon blinis

  • 18 small blinis
  • 3 slices smoked salmon
  • 75g cream cheese
  • 10cl whipping cream
  • Chives
  • Salt and pepper
  • Optional:
  • 1 tbsp mustard
  • 1 pinch Espelette pepper
  • Fresh herbs


  1. Preheat the oven to 180 C/350 F/gas 4. Place the blinis on a baking tray covered with baking paper and heat for 5 mins at most.
  2. Mix the cream cheese with some chopped chives, salt and pepper.
  3. Whip the cream and fold into the cream cheese mixture. The mixture should be smooth.
  4. Spread the cream and cheese mixture over the blinis and top each one with a piece of smoked salmon.
  5. Decorate with two crossed sprigs of chive, cut to the size of the blinis.
    Serve on a dish with a few slices of lemon.

The Chef's twist

Instead of the cheese and cream mixture, make a mayonnaise. Add finely chopped fresh herbs, a tbsp of mustard and a pinch of Espelette pepper to make a deliciously tangy sauce.
