Smoked salmon blinis

Ingredients
- 18 small blinis
- 3 slices smoked salmon
- 75g cream cheese
- 10cl whipping cream
- Chives
- Salt and pepper
- Optional:
- 1 tbsp mustard
- 1 pinch Espelette pepper
- Fresh herbs
Preparation
- Preheat the oven to 180 C/350 F/gas 4. Place the blinis on a baking tray covered with baking paper and heat for 5 mins at most.
- Mix the cream cheese with some chopped chives, salt and pepper.
- Whip the cream and fold into the cream cheese mixture. The mixture should be smooth.
- Spread the cream and cheese mixture over the blinis and top each one with a piece of smoked salmon.
- Decorate with two crossed sprigs of chive, cut to the size of the blinis.
Serve on a dish with a few slices of lemon.
The Chef's twist
Instead of the cheese and cream mixture, make a mayonnaise. Add finely chopped fresh herbs, a tbsp of mustard and a pinch of Espelette pepper to make a deliciously tangy sauce.
